West to East Coast to Coast across the Pyrenees/Southern France before heading south through Spain

This is my first big bike packing/touring trip and I am open and flexible to variations on the route and daily distance or even a completely different route! I am planning on getting the ferry down to Santander at the start of October. I will cycle up towards San Sebastian on the West coast and join the Komoot Route 'Traverse the Pyrenees' and head to the East coast. I will probably do sections of this coast to coast at a lower altitude in South France as there will no doubt be some beautiful places to see. This may also be the preferred route if the weather turns, or my fitness isn't good enough. Once I reach the East coast I will head South down into Spain. I would like to visit Barcelona and Valencia and head towards Portugal. I want to try some of the European Divide trail mixed with a bit of coastal riding. I'm not sure about daily distance but probably between 30 and 60 miles depending on the amount of climbing and conditions. I am in no rush and open to days off exploring and at least one rest day a week. I will mainly be camping with the occasional b&b or warm showers stay. Probably about 1 B&B/hostel once or twice a week When up the Pyrenees I have found hostels or alpine huts for when I am at an altitude above 2000m. This could change depending on how I manage the temperatures etc...
